The Homestead Pass series is set in Homestead Pass, Oklahoma.
Lazy M Cattle Ranch in Homestead Pass, Oklahoma, is home to the Morgans, cowboy bachelors Drew, Sam, Trevor, Lucas, and patriarch Grandpa Gus. These reluctant cowboys find the path to love and the future the good Lord has planned for them.
The Baby Inheritance is filled with rich characters and lots of food talk. Thanks to my cousin, Mary-Ellen, for this recipe for Italian Ricotta Cookies. If you like Lemon Ricotta Cookies, here's a link to those.
Italian Ricotta Cookies
2 sticks butter, softened
1 3/4 cup sugar
2 eggs
15 oz. ricotta cheese (Whole milk)
2 Tbsp. vanilla
4 cups flour
1 tsp. baking powder
1 tsp. baking soda
Glaze
4-5 Tbsp milk
1 1/2 cups powdered sugar
1 tsp. almond extract
Preheat oven to 350 degrees. Cream butter and sugar. Add eggs, cheese, and vanilla.
In a separate bowl, combine flour, baking powder, and baking soda. Add to the ricotta mixture.
Scoop teaspoon-sized balls and place on a cookie sheet two inches apart. Bake for 8-10 minutes. Allow to cool. Make glaze when cool. After glazing, add sprinkles.
Sadie's Avocado Toast
1 avocado (pitted with skin removed)
2 slices of whole grain bread toasted
1/2 teaspoon lemon juice
Kosher salt
Black pepper
Garlic powder
Mash avocado and mix in lemon juice. Add salt, pepper, and garlic to taste.
Spread on toasted bread. Yummy!
Bess Lowder's Chocolate Sheet Cake
2 cups flour
2 cups sugar
1 stick butter
1/2 cup Crisco
4 Tbsp. cocoa
1 cup water
1/2 c buttermilk
2 eggs, slightly beaten
1 tsp. vanilla
1 tsp. baking soda
Sift flour and sugar together in a large bowl. Add eggs and soda. Melt butter, Crisco, and cocoa in a pan. Bring to a rapid boil. Add flour, sugar, eggs, and soda mixture. Mix well and pour into a greased cookie sheet pan (with raised sides). Bake for 25 minutes at 350 degrees.
Icing (start 5 minutes before cake is done)
1 stick butter
6 Tbsp. milk
4 Tbsp. cocoa
1 box powdered sugar
1/4 tsp. vanilla
1/2 cup chopped nuts (optional)
Melt butter, milk, and cocoa. Bring to a boil. Sift in powdered sugar, add vanilla and nuts. Stir well and pour on the cake when it comes from the oven.
