Thank you to all my lovely readers who have followed the Lazy M Ranch series recipes. From The Baby Inheritance to The Cowboy's Forgotten Love, one thing connects all the books besides the Morgan Boys. Bess Lowder's Cinnamon Rolls.
Here's that recipe. My husband makes it each year for special guests. The recipe comes from the 1950 Edition of the Culinary Arts Institute Encyclopedic Cookbook, originally published in 1940. Yummy food never goes out of style.
We substitute yeast cakes with active yeast.
1 cake of fresh yeast is approximately the same as 1 envelope/packet of active dry yeast. 1 packet usually equals about 2¼ teaspoons, or ¼ ounce, or 7 grams of active dry yeast granules.
CINNAMON ROLLS
1 cake yeast, 1 cup warm water 1/2 teaspoon salt, 5 tablespoons
sugar
Flour (about 6 cups)
2 cups scalded milk
2 eggs, well beaten
1/2 cup melted butter
FILLING
4 tablespoons sugar
4 tablespoons butter
1 1/2 teaspoons cinnamon
1/4 cup broken nut meats
Add yeast to warm water, following directions on package.
Pour 1/2 the scalded milk over salt and 1 tablespoon sugar.
Cool to lukewarm and add softened yeast. Sift in about 1/2 the flour, beating thoroughly until the dough is smooth and falls from spoon in sheets. Place in greased bowl. Lightly grease surface and cover with clean, dry towel. When dough doubles in bulk, punch down.
Mix remaining lukewarm milk and sugar with eggs and melted butter before adding to dough. Stir enough of remaining flour in to form a ball which does not stick to the bowl. Turn out onto a floured surface and allow to rest 5 to 10 min.
Then, knead dough until it is smooth and elastic with small blisters that are evenly distributed under the surface. Set aside in greased bowl, grease and cover.
Let rise again; roll out on a floured board.
To prepare filling:
Mix sugar, butter, cinnamon and nuts together with a fork. Spread on dough, roll up like a jelly roll and cut crosswise into 2-inch pieces. Place on greased pan, cut side up, let rise until doubled in bulk and bake in hot oven (400° F.) 20 minutes. Makes 18 large rolls.
