Recipes from Daisy's Pies & Baked Goods

Imagine you are standing on Second Street, in Rebel, Oklahoma and looking at the new bakery in town. Daisy’s Pies & Baked Goods is spelled out in gold lettering against a navy blue background on the canvas awning over the shop. After you grab your pastry and coffee, you'll want to step outside and have a seat at one of the outdoor tables and chairs. Do take a moment to inhale the sweet spicy scent of fragrant begonia pots that flank the doors of the bakery. We're glad you're here!



Peach Cake


2 eggs

3/4 c. oil

1 tsp. baking soda

1 tsp cinnamon

1/2 tsp vanilla

1 1/2 c sugar

1 1/2 c Ballard Farm peaches mashed

1/2 tsp salt

2 c flour


Mix and bake in a 9 x 13-inch cake pan at 350 degrees for 40 minutes.


Frosting

1 stick butter

2 Tbsp flour

3/4 c evaporated canned milk

1 egg yolk

1 c sugar


Boil until thick, stirring constantly. Cool 2-3 minutes and mix. May add 1/2 cup nuts. Pour over cake.



Aunt Jay's Fresh Peach Pie


If you can't get Daisy's secret pie crust recipe, use your own or a store-bought pre-baked crust.


3/4 c sugar

2 Tbsp cornstarch

1 1/3 c cold water

1 (3 oz.) dry peach gelatin

6 c peaches, peeled & sliced


Cook the first 3 ingredients until thick and clear. Add dry gelatin to the hot mixture and stir well. Add peaches to thickened mixture. Pour into baked pie shell. Chill. Serve with ice cream.



Daisy’s Best Banana Bread Muffins Ever


Makes one dozen muffins.


3 brown bananas (1 cup mashed)

2 eggs

1 cup sugar

1 cup all-purpose flour*

1/2 teaspoon salt

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/2 cup vegetable oil

1 teaspoon vanilla


Glaze (optional):

1/2 cup powdered sugar

1 tablespoon milk or lemon juice


Mash bananas. Add the eggs, vanilla and then oil to bananas. Add the sugar and mix well. Add flour, salt, baking soda, baking powder, and cinnamon and mix.


Fill baking pan with liners and fill ¾ with mixture. Mixture is runny.


Bake for about 20 minutes or until a toothpick comes out clean.


To make the glaze, just mix together the powdered sugar and milk or lemon juice and spread over cooled muffins.
